Teriyaki aubergine

This teriyaki aubergine is made simple yet so delicious! Packed full of fiber for digestion, it’s great for a quick hearty pick-me-up!

Make this dish even more hearty with some spinach/pak choi and tofu.

Ingredients:

  • teriyaki dressing
  • 100ml of tamari
  • 50ml of mirin
  • 1 tbsp rice wine vinegar
  • 2 tbsp of maple syrup or sugar
  • 1 thumb of ginger grated
  • 3 garlic cloves, minced
  • 4 tbsp of sesame oil
  • 1 aubergine
  • Serve with: 100g of rice (jasmine or basmati)

How to make:

  • Mix the dressing together. cut the aubergine into inch cubes. Mix with the dressing then pop in a frying pan and fry for 20 minutes until cooked through.
  • Rinse the rice and cook as per pack instructions. Serve the aubergine on top with sesame seeds and spring onion.

*Serves: 2

*Suitable for: vegans, vegetarians
