This teriyaki aubergine is made simple yet so delicious! Packed full of fiber for digestion, it’s great for a quick hearty pick-me-up!

Make this dish even more hearty with some spinach/pak choi and tofu.
Ingredients:
- teriyaki dressing
- 100ml of tamari
- 50ml of mirin
- 1 tbsp rice wine vinegar
- 2 tbsp of maple syrup or sugar
- 1 thumb of ginger grated
- 3 garlic cloves, minced
- 4 tbsp of sesame oil
- 1 aubergine
- Serve with: 100g of rice (jasmine or basmati)

How to make:
- Mix the dressing together. cut the aubergine into inch cubes. Mix with the dressing then pop in a frying pan and fry for 20 minutes until cooked through.
- Rinse the rice and cook as per pack instructions. Serve the aubergine on top with sesame seeds and spring onion.
